There is a config supportMultiRecords (for both iOS and Android) that can be applied in such a case. Please set it to false in case you want only one photo or one video to be recorded.
However, this can be done if you start VE in one mode (photo or video). This config is applicable to any video segment, since a photo is also considered a short video (slideshow).
